Magnesium chloride (magnesium chloride), chemical formula MgCl2. This substance can form hexahydrate, namely magnesium chloride hexahydrate (MgCl2•6H2O), which contains six crystal waters. In industry, anhydrous magnesium chloride is often referred to as halogen powder, while for magnesium chloride hexahydrate, it is often called halogen flakes, halogen granules, halogen blocks, etc. Whether it is anhydrous magnesium chloride or hexahydrate magnesium chloride, they have one common feature: easy to deliquesce and easily soluble in water. Therefore, we should store in a dry and cool place when storing.
Physical and chemical properties:
The pure product of magnesium chloride is colorless monoclinic crystal, and the industrial product is usually yellowish brown with a bitter and salty taste. Easily absorb moisture and lose 2 molecules of crystal water when dissolved in water at 100℃. Its aqueous solution is neutral at room temperature. It starts to lose part of the hydrogen chloride and decomposes at 110°C, and transforms into oxychloride by strong heat, and decomposes at about 118°C when heated rapidly. Its aqueous solution has an acidic melting point of 118°C (decomposition, six water) and 712°C (anhydrous).
Boiling point: 1412℃ (anhydrous)
When hydrated magnesium chloride is heated, it loses water and hydrogen chloride partly generates hydrogen chloride and basic magnesium chloride.
Application areas:
1. Solidifying agent; nutrition enhancer; flavoring agent (combined with magnesium sulfate, salt, calcium hydrogen phosphate, calcium sulfate, etc.); fermentation promoter for sake, etc.; water remover (used for fish cake, the amount is 0.05%~ 0.1%); tissue improver (combined with polyphosphates as an elasticity enhancer for surimi products). Because of the strong bitterness, the usual amount is less than 0.1%;
2. Wheat flour treatment agent; dough quality improver; oxidant; canned fish meat improver; maltification treatment agent.
